Two Months and Counting...

It's been over two months since the doors at Thistle Meats were opened and the team has been hard at work. We've been challenged, informed, and inspired in many ways. There have been droughts, local processing shut downs, and even protestors from PETA! But those things seem faint in comparison to the satisfaction we have received from providing a service to our surrounding community. A service that represents the heart of our mission. To provide locally sourced, humanely raised meats that come from places we know and trust. To empower the home cook with quality ingredients and education. To build a business that represents a true respect for the animals and the craft. A special thanks to our families, friends, and community for supporting us in these endeavors. We hope that our efforts will continue to be accessible and utterly delicious!

Getting Ready

Oh wow. Ten months of planning and design, relationship-building and careful thought are in the barn. Plans have been approved, and we're breaking ground, digging in, and setting up shop. Thistle Meats is coming; we're sharpening our skills, honing in on our recipes, brainstorming ways to be the best we can be. We look forward to opening our doors in early 2014 and offering the most amazing meat and charcuterie possible. 

We couldn't be more pleased. Now it's getting good!
